I’ve been making this Fennel, Celery, Green Apple salad on repeat all summer. My boyfriend is obsessed with it and requests it all the time. And he’s not even a huge fennel fan. I, on the other hand, may be fennel’s biggest fan. I recently made a batch of sauerkraut with fresh fennel, fennel seeds and fennel fronds (should I share that recipe?!), which inspired me to use all three in this salad.
The crunch is perfection, and it’s all balanced by the creaminess of the fats. This salad actually keeps well in the refrigerator just in case you end up with leftovers (you probably won’t). It would also make a great salad to bring along to a summer picnic or backyard BBQ. Yesterday I added some smoked trout to it for some protein, and it was delicious. I hope you enjoy it!
