Meet the breakfast bowl I’ve been eating for 5 months straight. Also important to note that up until 5 months ago, I never made overnight oats, was never even a fan of oats at all (besides the occasional oat milk matcha latte). But here I am with a newfound love of overnight oats. This bowl is seriously my comfort. And has been my “safe food” over the last several months of serious digestive troubles.
I have never been a huge breakfast eater. When I was a child, I didn’t eat until school lunch around noon and that’s been mostly how I’ve maintained my eating habits until this year. After freezing my eggs and the health saga that followed, I did a bunch of blood work and based on those results I’ve adapted my diet a bit and started eating breakfast as a way to balance hormones and regulate blood sugar. This bowl keeps me satisfied and I don’t get hungry again for a full 4-5 hours after eating it. I’ve also been using the Glucose Goddess’ tricks to help stabilize blood sugar, including drinking 1 Tablespoon of apple cider vinegar 1-15 minutes before eating and/or trying to prioritize eating veggies first (before carbs) whenever possible.
