Freshly baked apple muffins could be one of the best smells to fill my home. Warm, cozy, comforting. Perfect for fall. I’m eating less and less sugar in all forms these days, but these gluten-free, vegan muffins are just the right amount of sweet (and sweetened with maple syrup) to satisfy when I’m wanting a treat. I love doubling the recipe and baking an extra batch to give out to friends and neighbors. Nothing sweeter than giving a homemade muffin (or two) to someone you care about.
I can’t believe we’re only a couple short weeks away from the fall equinox. Is it just me or did the summer fly by? It’s a different sensation living in Mexico and gearing up for fall. This time of year signals the end of the long rainy season, and though temps start to get a little crisp here in Mexico City, the sunshine is abundant. Definitely way different than my life in Portland.
I miss pumpkin patches and apple picking, but I’m grateful for lots of sun and the big Día de los Muertos celebration that happens in early November here in Mexico. No matter where I am, I always welcome the changing of seasons with open arms. New energy, new foods, new routines. It feels good to switch it up.
