I’m having a real baking cookies moment right now. Ask my boyfriend. I’ve been making at least a couple batches each week. I call my boyfriend the Cookie Monster, so he’s been thrilled. I first made these Tahini Za’atar Cookies on the fly as a little dessert for a Persian dinner party I hosted last week. They’re not Persian, but a little ode to Palestine. Za’atar is such a special ingredient. And most often seen in savory uses, so I wanted to try using it sweetened up in a cookie. My favorite za’atar is from Canaan Palestine (the best products!!!).
This cookie is grain-free and vegan! And can also be made sugar-free if you use this maple syrup. You can also just eat the dough as is since it’s egg free. And sometimes that’s just what I do! I’ll bake half the dough and keep the other half in the fridge to nibble on. My childhood dreams come true.
