I set out to create one great cookie recipe for the holiday season, and I have to say I really nailed it. And honestly, this is just a solid cookie recipe to make all year long. They’re gluten-free, refined sugar-free and egg-free! They can also be made vegan if you’d like. The texture is my perfect cookie texture: chewy with just the right amount of crisp. I also looooove a salty cookie, so these hit that mark too (though I made notes/easy adaptions for those of you who don’t want a salty cookie). The recipe makes 15 cookies, so if you’re baking for a cookie exchange or to gift to friends and family, be sure to double the recipe. Super excited to share these cookies with you!
